Nishant Arora grew up cooking in the foothills of the Himalayas.
He staged at three-Michelin-star Frantzén in Stockholm, and was Head Chef at Sidart (3 hats) and Cassia (2 hats) in Auckland, before leading teams at Cutler & Co and Society in Melbourne.
At Banksia, he marries contemporary technique with Indian flavours and the best local produce.
