Gluten-Free Dining in Caulfield North — Every Dish, Done Properly

Gluten has never entered our fryer.

Every single item on our menu can be made gluten free — not as an afterthought, but because we've built dietaries into our kitchen to handle it right.

If you're coeliac, gluten intolerant, or just cooking for someone who is, you already know the drill — the anxious phone call before booking, the menu read twice, the "just a side salad" fallback when nothing feels safe.

We built Banksia so that call isn't necessary.

Our fryer has never had gluten in it. Neither has our coals, where we’ll cook your steak if you order it.

Every dish on our menu — from the wagyu to the barramundi to the lamb ribs — is built to be made gluten free. Our kitchen team treats every dietary requirement as seriously as a food safety issue, because that's exactly what it is.

This isn't a side note on our menu. It's how we cook.

Note: Every commercial restaurant we have seen has the same liability waiver. We make every endeavour to respect your choices, and ensure your safety, however please be aware that there is always a risk due to contaminants being contained in our kitchen.

DINNER SPREAD

Our dinner concept is the $40 each Spread.

All mains are $40, except the eye fillet at $55.

We’ll throw in [gluten free] bread & sides to fill the table.

It includes a top marbled Rump MS 8-9 from Sher Farm in Victoria, Roast Veggies, Risotto, Lamb, Barramundi, Chicken, Brisket. Check our sample menu to see that they are all listed as Gluten Free - not as afterthoughts either.

We normally bring between 2- 3 sides, and try to change things up pretty regularly based on seasonal produce, or your personal preference.

Our gluten free bread is proudly purchased from Glazed in Elsternwick - a dedicated gluten free local bakery.

THE DETAILS - HOW WE APPROACH GLUTEN FREE DINING

  1. When you sit down, the first question you’ll be asked is ‘do you have any dietaries?’ Before you order drinks, before you order food. It’s first every time because its that important. You will see it on the bill when you pay - we will have written ‘Gluten Free’ on it.

  2. We have built dietary considerations deeply into our mise-en-place. Thats the kitchen word for all the prepation that happens before you walk in. All the sauces, the garnishes, the slow cooked meats, the steaks, the fish. So we’ve got gluten free soy sauce instead of regular soy sauce. We have gluten free breadcrumbs, instead of regular ones. Bread is cut on a different cutting board and using a different knife. Anything with common cooking just doesn’t get gluten. Instead we’ll add it last and have alternatives planned.

  3. The charcoal grill — naturally gluten-free cooking method, no flour-based marinades or crumbs anywhere near it

  4. Sous vide preparation — our chicken breast, lamb ribs and chicken wings are cooked sous vide at precise temperatures in sealed bags, which is inherently about as contamination-proof as cooking gets.

  5. Sauces & stocks audit — this is the part most restaurants get wrong and guests worry about most (soy sauce, thickened sauces, stock bases often hide gluten). We check everything.

  6. Is it perfect? Absolutely not. Anything that people do leaves the door open for human error unfortunately. But we are trying as hard as we can.

A NOTE FROM THE FOUNDER

THE SPREAD CONCEPT IS DESIGNED FOR BIG GROUPS WHO OFTEN HAVE DIETARIES.

As someone who’s wife has pretty clear dietaries, I’ve sat through countless dinners where we’d go somewhere that was picked for us, and my wife barely had an option. She hated it and for the best part of 20 years I’ve hated it.

When I opened Banksia, I wanted it to be a place for everyone. So when you come in a large group, you know everyone can come. You don’t have to worry about ‘the fussy one’ as my wife was termed.

Banksia is a place for everyone. Not for judgement.

I think it’s also worthwhile explaining the numbers here. I saw a stat that said 1 in 70 people are gluten free. Anecdotally I would think its higher. But then once we add in vegan, vegetarian, lactose free, etc etc, the overall chance that any one person has an allergen or a dietary is 30% according to the CSIRO. That obviously adds up pretty quickly so that on a table of 4, 6 or 8, its now super rare for there to be no dietaries.

That’s why from Day 1, we built Banksia with the aim of hosting everyone. We haven’t yet heard a request we couldnt honour.
