GREAT INGREDIENTS MAKE GREAT FOOD
A note about our ingredients:
As of July 2026, there was new legislation introduced that required that all seafood needs to be stated if its Australian or imported. Our is all Australian.
We of course want to go further than the baseline and we want to show off the amazing farms that we have the pleasure of working with. The reality of hospo is that supply chain logistics are not quite what I expected coming from the world of tech. As an example, our steaks are unbelievable. But its a farm. Some weeks there isn’t a slaughter, and others they don’t have any meat of the cut’s we serve. I give that explanation to say that every single night will not be the same. If you’re interested when you come in, please ask me, I’ll be more than happy to let you about today’s ingredients. I will endeavour to update this regularly, but as of July here is a list of where our key ingredients are from:
Specialist Produce:
Potatoes - Spud Sisters, Victoria
Tomatoes - Wandin Yallock, Victoria
Cheese:
Stracciatella, That’s Amore, Thomastown, Victoria
Goat’s Cheese - Meredith Dairy, Meredith, Victoria
Fish & Seafood
Tuna - NSW
Barramundi - Wyndham, Victoria
Salmon Roe - Tasmania
Oysters - These honestly rotate a lot. The last few weeks have been Sydney Rocks from Merimbula, NSW & Pacific Oysters from St Helens, Tasmania.
Meat
Lamb - Victoria
Brisket - Normally Sher Farm, Ballan, Victoria, but we did recently get a batch from Kilcoy Queensland also.
Rump & Eye Fillet - Always Sher Farm, Ballan, Victoria. We endeavour to have these 2 cuts available, however the nature of us buying directly from a farm means that supply isn’t as reliable as other restaurants who buy from a factory. In the past we have also had other cuts as replacements, including flap steak which was a delightfully tender and flavourful revelation for me.
